Most castle weddings are a compromise: a hotel with a turret, a keep you share with the day-trippers, a grand hall you rent for an afternoon. Borthwick Castle is not that. A 15th-century medieval tower-house of about 1430, standing almost unaltered in the Midlothian countryside twelve miles south-east of Edinburgh, it is a real castle, with walls fourteen feet thick, and for a wedding you take the whole of it, per night, for yourselves.

Twin towers rise out of the parkland, floodlit at dusk, and inside the castle keeps its stone-vaulted ceilings, its great fireplaces and its deep, unhurried sense of age. The Great Hall, hung with oil paintings and lit by iron chandeliers and candlelight, has hosted feasts for the better part of six centuries; the stone-vaulted Garrison room, down a candlelit aisle, feels older still. Very little needs doing to either to make them extraordinary for a wedding.

What sets Borthwick apart is that it is genuinely historic, not a set. Mary Queen of Scots sheltered within these walls in 1567, and the castle carries that weight lightly but unmistakably. For a couple, it means a wedding that feels less staged and more lived: vows by candlelight, a banquet beneath suits of armour, whisky and toasts by firelight, and the whole company gathered behind the same ancient stones rather than scattered across a car park of hotel rooms.

The kitchen matters as much as the setting. Borthwick's own award-winning brigade, led by chef Craig Gibb, cooks Scottish and modern British menus built on the season, served by candlelight in the Great Hall, with canapés and Champagne in the State Room lounge beforehand. It is refined, generous cooking that suits the grandeur without overwhelming it, and the whisky flows for the speeches.

And because there are 13 bedchambers across the castle and its grounds, sleeping 28, the wedding is never just a day. Couples take the castle exclusively, the party stays the night, from the Gatehouse bridal suite with its Italian marble roll-top bath to the Cromwell, Wizard Tower and Crookston chambers, and the celebration spreads either side, a nightcap by the fire, breakfast in the hall, the castle entirely your own until morning.
