Dining at the Esplanade is in-house, on the cooking of the Cilento and Campania, the seafood of the coast and the produce of the plain, home of true buffalo mozzarella. Wedding dinners are served in the salons, in the chinoiserie dining room or in the garden by the pool, tailored to the couple.

The Pagano Estate

The Esplanade is the Pagano family's founding hotel, and the family's land feeds it. A few kilometres inland lies San Salvatore 1988, their organic Cilento estate: vineyards and olive groves, a herd of more than 750 water buffalo, a dairy, a winery and an olive mill, wrapped around kitchen gardens and the family's own farm shop. Almost nothing on the table here is bought in. The wine is grown and bottled on the estate, the olive oil pressed there, the mozzarella and yogurt made each morning from the estate's own buffalo, and the cooking, crowned by the Michelin-starred Tre Olivi at the sister Savoy, begins in the family's own fields. Hospitality here does not begin at check-in. It begins in the soil.

When Giuseppe Pagano restored the Esplanade in 1980, he set out to make a hotel that felt like staying in a private villa, and the boutique still does. The garden runs in a thousand shades to the pool; the salons are hung with the hand-painted ceramics of Vietri sul Mare; a grand piano stands in the lobby. It is small, personal and full of character, a house rather than a resort, and it has spent more than forty years learning how to hold a wedding. That is a rare combination: the intimacy of a villa, and the seamlessness of a hotel that has done this thousands of times.
