Tagines, Bread and Mint Tea.

The kasbah is offered venue-only, so couples bring their caterer, and the food is of the south: tagines and grilled meats, salads and warm breads, dates from the oasis and mint tea in the courtyard. Dinners are laid in the inner courtyards or on the rooftop under the stars, with a cooking lesson, bread from the old ovens and gnaoua music part of the days around the wedding.

The Drâa is Morocco's longest river, and its valley a green thread of date palms winding south from Ouarzazate toward the desert, walled in by ochre mountains and studded with old kasbahs. Tamnougalt is one of the finest of them, and Kasbah des Caïds its fortress. To marry here is to marry in a landscape almost no other wedding venue can offer: an oasis of palms, a 16th-century citadel of earth, and the silence of the desert beginning just beyond the walls. It is four hours from Marrakech and an hour from Ouarzazate, far enough to feel like the edge of the map, and all the more memorable for it.

Kasbah des Caïds is in Tamnougalt, near Agdz, in Morocco's Drâa Valley, on the old caravan road south of Ouarzazate. The palm oasis runs along the river below the fortress; the ochre mountains rise on either side; and the Sahara begins not far beyond. Ouarzazate and its airport are about an hour away, and Marrakech about four hours over the High Atlas by the Tizi n'Tichka pass, a spectacular drive in itself.
